Apprenticeship Programmes: Bournemouth & Poole College

Academy of Culinary Arts Specialised Chefs Course at Bournemouth & Poole College

Winner of the 2001 National Training Award the Specialised Chefs Course at Bournemouth & Poole College is open to students from anywhere in the UK.

Entry Requirements:
Candidates should be under 19 years of age to apply with GCSE English and Maths and four additional GCSE’s all at grade D or above.

Prospective candidates will be interviewed, along with their parents, by the college.

Course Details:
The three-year, block release course begins each September and includes training in:

  • Kitchen and larder
  • Patisserie and confectionery
  • Health, safety and hygiene
  • Food service through dealing with customers
  • Culinary and conversational French
  • Husbandry and food issues

Practical, work-based training takes place in prestigious hotels and restaurants, mostly within London, with members of the Academy of Culinary Arts, over two 12-month periods. This is interspersed with three 12-week periods of tuition at Bournemouth & Poole College:

September - December College training 3 months
January - December Employer training 12 months
January - March/April College training 3 months
April - April Employer training 12 months
April - June College training 3 months
June - September Employer training 3 months

A training allowance is paid whilst at College, and a salary during employment, with those training in London receiving a London weighting. Assistance in arranging accommodation is also available during full-time employment with Academicians. Whilst in employment, students are monitored by the College on a regular basis.

Assessment and qualifications:
Students are continually assessed throughout the duration of the course and will work towards several qualifications:

NVQ Levels 2 and 3 Professional Cookery
Key Skills in Application of Number Level 2
Communication Level 2
Levels 2 and 3 Technical Certificates
Employment Responsibilities and Rights
NVQ Level 2 Food and Drink Service
Culinary French

The culmination of the course is a six-hour practical examination set and examined by the Academy of Culinary Arts in order to gain their Diploma in Professional Cookery.
